Two good reasons to remove the colour

Size. A colour scan stores three values per pixel; greyscale stores one. Converting a scanned document often cuts the file to a third of its size, which is frequently enough on its own to get under an upload limit.

Printing cost. Some printers pull a little colour ink for anything that is not perfectly neutral — and a scan of white paper never is. Converting first guarantees the printer uses only black, which matters when you are paying per page at a shop.

Greyscale or pure black and white?

Greyscale keeps shades, so photographs and stamps still look like themselves. Pure black & white keeps only black and white with nothing in between: the smallest possible file and very crisp for plain printed text, but it destroys photographs and can drop out faint handwriting.

For a document with an identity photo on it, use greyscale. For typed pages, black & white.
